Stilton Colston Basset

The origins of Stilton aren’t clear. Various people and places have been accredited with the creation of the cheese, but according to the Stilton Cheesemaker’s Association, Stilton was first marketed by Cooper Thornhill in the 1730s at his pub, the Bell Inn, after having discovered a distinctive blue cheese at a farm in Leicestershire. The pub was located on the Great North Road in the village of Stilton - the main route between London and the North of England – which would explain how popularity and demand for the cheese grew across the country. Stilton is now the only British cheese to have a Certification Trade Mark, and its PDO status requires that it be produced in either Derbyshire, Leicestershire or Nottinghamshire (therefore cheese made in the village of Stilton, which finds itself in Cambridgeshire, can no longer be sold as Stilton). At Provisions, our Stilton comes from Colston Bassett Dairy, who have been producing award winning cheese for over 100 years.

Stilton has a natural, light brown rind. The paste is a pale yellow colour with blue veining throughout, giving an almost marble-like effect. The texture is both crumbly and creamy and it has a rich, spicy flavour with a nice salty finish.
