Mimolette is a raw milk, hard paste cow's milk cheese from the North of France. Our mimolette is matured for over 2 years. Eaten young or more matured, mimolette is one of France most recognisable cheese, due to its moon-like rind and its very distinctive orange colour. It is liked by kids for its less acidic taste and its waxy texture. Our mimolette has an intense fruitiness and nuttiness, with notes of caramel and butterscotch.
