Carignan, Syrah, Grenache
After managing vineyards in Loire and Morocco, Remi settled on Corbières. He pored over a geological map of the area, searching for a place of diverse soils and terroir to establish himself as a winemaker before finding the town of Villesèque-des-Corbières.
Rémi’s plots have a bit everything: some bordered by forests and some full of garrigues, a range of altitudes, every possible type of exposition, and a range of soils types. Add to this the fact that the jagged cliffs protect the vines from continental influence and allow a cooling sea breeze to keep the freshness in the grapes. These natural influences bring complexity to Rémi’s wines, really giving a sense of his surroundings.
When it comes to technology Rémi is old school. His method of vinification is foot stamping and a basket press rather than mechanical. Every aspect of the process is carried out by Rémi, from winemaking to labelling, and bottling takes place when the wines are ready, but also when the weather and lunar calendar is right.
