Cazé-Thibaut is a distinguished Champagne house located in the Vallée de la Marne, France, with a winemaking legacy spanning ten generations. Founded in 1953 by Roger Cazé, who was the first in his family to commercially bottle Champagne, the estate has evolved under the stewardship of his grandson, Fabien Cazé. Since taking over in 2007, Fabien has focused on producing precise and elegant wines that authentically express their terroir.
The estate encompasses 2.66 hectares across six parcels in the villages of Châtillon-sur-Marne and Vandières on the right bank of the Marne River. Fabien employs organic farming practices, certified since 2018, avoiding herbicides and pesticides to ensure sustainable viticulture. In the cellar, he adopts a minimal-intervention approach, utilizing slow, cold native yeast fermentations in a mix of tanks and barrels, with aging periods ranging from 24 to 72 months, depending on the cuvée.
One of their notable offerings is the "Crayère" Brut Nature NV, a blend of 55% Pinot Meunier and 45% Chardonnay. This Champagne undergoes a meticulous vinification process, including manual harvesting, gentle pressing, and aging without dosage, highlighting its natural acidity and minerality. The palate is fresh and balanced, making it an excellent companion for seafood and light appetizers.
