Selles-sur-Cher is one of the classic goat's cheese from the Loire Valley, with Appellation (AOC) status since 1975. It is unpasteurised, and usually covered with a thin coating of black ash over the bloomy rind, giving it a blue-grey appearance. There are mild aromas of goat on the nose, and on the palate there is butter, grass and cream, with a long clean finish of lactic and citrus notes.
Ingredients: Milk (goat's), salt, traditional rennet. Unpasteurised.
