La Gabarre is a raw goat's milk cheese from the Loire, produced on the outskirt of Cosnes sur Loire, near Pouilly Fumé. It is named and shaped after the boat that used to be used to move goods from one bank of the Loire to the other, back in the day. The Gabarre has a white and blue velvety rind, and is a chalky cheese with a good level of saltiness. Over time it develops delicate aromas of wet leaves and mushrooms on the palate.
Ingredients: Milk (goat's), traditional rennet, salt. Unpasteurised.
