Catarratto Extra Lucido
The goal of Fuso is to "search for and bottle Italy's natural and characterful daily drinkers". Fuso works with farmers across Italy who are committed to organic viticulture, low-intervention, and terroir-driven wines. The Cala wines are sourced from Dario Serrentino, a Sicilian winemaker known for making highly drinkable and salty island wines. Dario works in the raised 400-meter plains outside the town of Partinico, 30 km west of Palermo. For this delightful skin-contact white, he works with a specific clone of Catarratto called Catarratto Extra Lucido ('extra shiny Catarratto'), which gives wines with more texture, depth, and colour than its more widely planted counterpart. The vines for this wine are organically farmed, covering one hectare on red sand and clay soils.
Fermentation with 50 hours on the skins in stainless steel tanks and, after pressing, in stainless steel for another 10 days. After fermentation, the wine goes through six months of elevage in tank.
Tasting Notes : Textured and oily with notes of orange pith, maple and a salty, mineral finish.
Food Pairing : A variety of seafood would work here, but Jose Gourmet’s Octopus in Olive Oil with Garlic would really hit the spot !
