Daniel Dugois - Vin Jaune 2013 - Jura, France

There really are few other wines out there like Vin Jaune. Based in Sainte-Agnes in the Jura, Domaine des Marnes Blanches is owned by young couple Pauline and Geraud Fremont. They took over this 10ha estate in 2006 and farm their old vines organically.

Savagnin is the Jura’s most famous grape, which probably isn’t saying very much. But it makes the oxidised Vin Jaune that the region is famous for. The wine is aged for seven years in old oak barrels. During this time the wine is not topped up and the only thing protecting it from oxygen is a thin layer of yeast that forms on the wine’s surface. The result is a uniquely nutty, savoury wine that is a dream to pair with food.

Tasting notes: Walnut, almond, baking spices. Simultaneously rich and tangy.

Food pairing: A classic pairing would be with an extra-mature Comte or Vacherin Mont d’Or, but you could also try with a mushroom risotto, some Taleggio or roast chicken.
