Alessandro Viola - Note di Bianco - Sicily, Italy



Alessandro Viola makes wine in Alcamo, located halfway between Trapani and Palermo on Sicily's north coast. He farms his 12ha of land organically, with an ardent belief that nature knows best. Sea breezes and significant altitudes keep his vines cool throughout the summer months, giving a freshness to his wines not often seen in this part of the world.

In the cellar, he prefers to keep things simple. Depending on the cuvee, vinification occurs in stainless steel, Marsala botti, or French oak. Judicious lees stirring provides depth and texture, balancing the grapes' natural acidity. Sulfur only makes an appearance in tiny quantities during bottling.

The grapes for Note di Bianco come from clayey soils at 250 metres of altitude. The vines are 15 years old and are harvested relatively early in the season. Alessandro direct-presses the grapes before fermenting and ageing the wine in stainless steel for around five months.

Tasting Notes : Joyful, fresh and fruit-forward - lifted by a lovely, citrusy and salty finish.

Food Pairing : This wine screams out for seafood – drink alongside Jose Gourmet’s Razor Clams or Octopus in Olive Oil and Garlic.
