Syrah, Carignan, Grenache, Cinsault
Just over six years ago, Chloé and Fred packed in their London jobs and travelled around France, pursuing their dream of making wine. They settled on an eight-hectare garrigue fringed slice of heaven in 2016. The location is on the hallowed soils of Faugères in the Languedoc, famous for its solid bedrock of Schist. On the rocky Schist soils, old vines must work hard to establish their roots, but the result is concentrated and balanced wines. Chloé and Fred farm biodynamically and use natural treatments and minimal copper. They have recently built a cellar that allows them to be self-sufficient on the land. Standing in the vineyard and looking out over the coastal plain and the sea, it is clear why the couple chose to name their domain ‘Serrals’, the Occitan word for hills.
The Sur le Zinc cuvée is earlier harvested, young vine Syrah that is blended with some Carignan, Grenache and Cinsault. The whole bunch Syrah undergoes carbonic maceration with some free-run Carignan juice. The Carignan, Cinsault and Grenache are all destemmed. It is then aged on fine lees in stainless steel.
Tasting Notes : A lighter and easier style of Syrah, with black fruits and refreshing acidity.
Food Pairing : Wonderful alongside a variety of charcuterie – Maison Argaud’s Wild Boar Terrine would be particularly well matched !
