Corra is a Trentino-based family business, founded in 1850 by Giacomo Corra when opening his ‘Bettola’, a deli in which you can find everything, including homemade charcuterie that he himself would produce. 

After the first world war, his son took over management of the shop and the farm where they raised their cows. He wrote memoirs for his children, of war stories and precious recipes. Recipes that are still used today by Pio and Luca, his grandchildren, who now take care of the production of Corra’s specialities. 

The beef comes from the 'Grigio Alpina' breed, one of the oldest inhabitants of the Alps. It is slightly smoked with mild spicy notes, very soft while being very lean. It should be served thinly sliced with a drop of olive oil and will pair perfectly with an alpine cheese.
