Albillo

Alfredo Maestro is a self-taught pioneer of natural winemaking in his native Spain. He began making wine in 1998, farming organically but taking a relatively conventional approach in the cellar. This all changed in 2003 when he decided to stop muddying his organically farmed grapes with unnecessary chemicals and sulphites in the winery. Since then, his holdings have increased to 9 hectares, and his wines have set a precedent for natural winemaking in Spain.

Alfredo makes Lovamor from the extremely rare Albillo grape, indigenous to the region but almost extinct. Grapes are harvested by hand, fermented in stainless steel, and macerated on their skins for seven days. The wine is aged in old French oak barrels before being bottled unfined, unfiltered and without any additional sulfur.

Tasting Notes : Rich and textured with a pronounced acidity - aromas of baked apple, apricot, and honeysuckle.

Food Pairing : Jose Gourmet’s Spiced Tuna Paté would be exceptional here ! A bit of Gazpacho wouldn’t go amiss either.
