80% Pinot Noir, 20% Chardonnay 

Most Champagne is made by large 'maisons' who buy their fruit from lots of small farmers. But we prefer wines made by the same people that grow their own grapes. These 'grower' Champagnes are becoming increasingly popular. To understand why, all you have to do is give it a taste! 

The Couche family own vines in two parts of Champagne: 7 acres of Chardonnay vines in Montgueux and 25 acres of Pinot Noir in Buxeuil, grown on steep slopes overlooking the Seine river. This Champagne was the first to be certified biodynamic in the whole region back in 2008. 

The wine is made up of vintages from 2011 to 2016 with the majority coming from the 2015 and 2016 harvests. The wine spends five years ageing on its lees. This Extra Brut style is made with only the tiniest addition of sugar. 

Tasting notes: Apples, pastry, marzipan. A wine finely balanced between rich flavour and fresh acidity. Wonderfully complex and, yes, elegant. 

Food pairing: Try with some salty, jamon croquetas or even fish and chips!
