We have worked with Mayte since Provisions started in 2015. The are a ham specialist, but also make their own cured meats in St Jean Le Vieux in the French Basque Country. They only use Basque pigs in their recipes.
The famous Toulouse sausage is a fresh sausage really well seasoned with salt, black pepper and herbs, with smokiness coming from the pork belly.
Traditionally used in cassoulet or other stew, you can otherwise simply grill it with a side of mash potato.
