100% Gamay
The Santini Collective is a négociant based in Auxey- Duresses that focuses on providing vin de soif, fashioned from interesting and unique terroirs. Chris Santini is based in Beaune and has been sourcing parcels from the Southern Rhone all the way to Champlitte, the northernmost part of Burgundy which borders Franche-Comté. All their wines are fermented with native yeasts and bottled unfiltered. Chris’ wines are always leaning towards the perfumed, gently extraction style. He calls a lot of his fermentations ‘infusions’ as he aims to extract as little as possible. The goal of Santini Collective is to “honour and perpetuate the accessible, naturally made and easy drinking wines our Corsican and French ancestors enjoyed for generations.”
This cuvee is a collaboration from two members of the Auxey collective, Chris Santini and Jon Purcell (Vin Noe). A single, old vine parcel from Lantignié, which is on its way to becoming the 11th cru of Beaujolais in the coming years. Concrete tank fermented and aged for 8 months in old barrel, this is a coming together of two styles, Chris preferring concrete and light extraction and John preferring old wood with longer extraction. Typical of the greatest terroirs of Lantignié, hard granite interspersed with quartz, fluorite and barytine, this is a Beaujolais with depth and character. Suitable for drinking young or keeping around for a few years. We think this is the best vintage made so far by Chris and Jon.
Tasting notes: A nice mix of herbs, rounded oak spice and gamey gamay fruit, with a mineral backbone.
Food pairings: Risotto with black trumpets would work well. Check the Provisions Recipes section for the recipe Andrew Clarke created with our ingredients!
