Picodon is made from raw goat's milk in the mountains of Ardeche and Drome regions in France. It's a small disc-shaped goat's cheese weighing between 60g to 80g. The colour is bright white when fresh, turning a golden beige when ripe. The paste is compact, starting off very moist drying as it ages. The cheese has a great acidity when fresh, with notes of creme fraiche, becoming rounder and nuttier as it matures.
Ingredients: Milk (goat's), salt, traditional rennet. Unpasteurised.
