Munster

Munster is a semi-soft, washed rind cheese made from milk produced by cows living in the Vosges mountains of France. Munster dates back to the 7th-century when Benedictine monks began producing it. Its name comes from the small town of Munster in Alsace, and derives from the Latin word monasterium, meaning monastery. It is believed that the cheese was made as a tasty substitute for meat, which the monks were not allowed to eat, hence the dense texture and full flavour. It has been AOC protected since 1969.We get our munster from a farm that only uses the milk of their own 20 Montbeliarde cows cattle.

Munster rind is orange-yellow in colour and it has a buttery-white pâte. The texture is smooth, meaty and sticky. It has an earthy, pungent aroma but the flavour is relatively mild. On the palate it is fruity, salty and tangy at the same time. It would pair nicely with a skin contact Alsace Pinot Gris!
