Mozzarella is a fresh, unpasteurised, stretched-curd cow's cheese from Italy, traditionnaly produced in the Southern part of the country. This cheese gets its name from the Italian word mozzare, meaning to “cut off”, which relates to the method of production. Mozzarella has had DOP status since 1996, requiring that it be produced in certain areas within the Campania, Lazio, Apulia and Molise regions. It was also given a TSG certification (Traditional Specialities Guaranteed) by the EU in 1998.
At Provisions, our mozzarella comes from Casearia Casabianca, situated in the Latin province of Lazio. Their land extends over 90 hectares where their buffalos are bred in free housing. In 2017 the company was given the Best Mozzarella di Bufala DOP Award at the TuttoFood Fair in Milan. It does not have a rind per se, and is bagged in a brine. The paste is white and is smooth and shiny on the outside, whilst inside it is watery and elastic. It has a fresh and delicate milky aroma. The flavour is mild but lasting with a good balance of acidity and sweetness. Excellent in a salad or versatile enough to add to many baked dishes, or pizza of course!
