Carignan, Syrah, Grenache

If there was ever proof that the Languedoc can make serious, age-worthy wine, Faugères is the place to go to look for it. This appellation, located 20km northwest of the town of Béziers, benefits from altitude which tempers the warm Mediterranean climate. Didier Barral oversees 25ha of biodynamically farmed vines that he uses to produce structured, expressive red wines.

Cuvée Jadis is a blend of 50% Carignan, 30% Syrah, and 20% Grenache. All of the grapes are hand harvested, fermented on indigenous yeast and punched-down regularly to maximise the extraction of tannin, colour, and flavour. The wine is aged for just over two years in oak barrels, 10% of which are new oak, to produce a structured and complex red wine.

Tasting notes: Black fruit, dark chocolate, earthy. A structured wine with fresh acidity and high tannins. Drinking now but will happily age for 10 years.

Food pairing: Slow, fire-roasted lamb shoulder with salsa verde. Fresh Borlotti beans cooked with garlic and loads of dry herbs. A plate of Saucisson!
