Jacques Lassaigne - La Colline Inspirée Magnum - Champagne, France


100% Chardonnay

Blancs de Blancs is one of our favourite styles of Champagne and this is a great example. Based in Montgueux, an area sandwiched between Côte des Blancs and Côte des Bars, Emanuel Lassaigne farms 4ha of vineyards organically, something that is quite rare in Champagne. His father Jacques first planted vines in the 1960s. Emanuel took over in 1999, stopped selling the grapes to big Champagne houses and started making his own wine instead.

100% of the wine is vinified and aged in oak barrels for extra texture and richness. Its a blend of the 2012, 2013 and 2011 vintages. The wine spends three years ageing on its lees and a further three years in bottle to achieve a rarely seen level of depth and richness. 

Tasting notes: Stewed lemons, tropical fruit, hazelnuts. Textured mouthfeel and rich flavours are superbly balanced by fresh acidity. 

Food pairing: Surprisingly versatile. This would work equally well with scallops as it would with a creamy, mushroom risotto.
