Gruyère is a raw cow's milk, hard paste cheese, produced in the Fribourg region of Switzerland. Our Gruyère Alpage is produced high up in the Alpages of Fribourg. Its rind is rugged and brown, and the paste is yellow, which is typical with summer milk as the colour is influenced by the flowers and meadows tha the cows are grazing during Spring and summer. On the palate, the texture is rich and buttery with a long fruitiness to it, and a good salinity. Gruyère can be enjoyed on its own but its intensity makes it a great cooking cheese too.
