Entre Vinyes - Funumbal 2017 - Penedès, Spain


Xarelo-lo, Parellada, Macabeo 

One of our favourite sparkling wines at the moment. This is a “declassified” Cava - it’s fermented in the bottle, aged on the dead yeast (lees) for two years, and then aged further in the bottle before release.

As a result, it’s had lots of time to mature and develop loads of complexity. Most Cava is released after just nine months of ageing and most Champagne after 15 months! This extended lees ageing imparts toasty, bready flavours that set this wine apart from fruitier styles of fizz like Prosecco.

By taking their time, winemaking couple Maria and Pep are able to create something really special. The grapes come from Foix, a protected park in the heart of Penedès, Catalonia, and grow on soils that are so poor that the vineyard is known as “The Witch’s Path”.

Tasting Notes: Apricot, citrus zest, toast. “Brut Nature” which means the wine is bone-dry with crisp acidity and finely textured bubbles.

Food pairing: This wine would pair equally well with fresh cheeses like Mothais or pungent cheeses like Epoisses. Of course, it’d be just as nice with some salt and vinegar crisps!
