We were fortunatate to meet Sylvère Trichard through Julien Altaber who made his Métisse 2015 from Gamay grown at Domaine Séléné. Sylvère took over from his uncle in 2001 having previously worked with local Jean-Claude Lapalu, and Domaine Belluard in Savoie.

The 6 hectares are located in Blacé just outside Brouilly in the south of Beaujolais where he makes his Beaujolais and Gisous wines, and he has some Beaujolais-Villages vines in Saint-Etiennedes-Oullières which are planted on more granitic soils and are currently in conversion.

Gisous is made from grapes harvested from 90-year old vines which are fermented using carbonic maceration and then aged in tank and barrel. 

Tasting notes: Juicy red berries, spice, leather. Medium-bodied but fresh. Excellent served chilled. 

Food Pairing: Soft cheese like Camembert, salty saucisson and even sushi!
