100% Aligoté

Naima and David took over 2 hectares in Chassey-le-Camp in the Cote de Beaune, a block comprised of Pinot Noir, Pinot Blanc and Aligoté planted between 1947 and 1960. A great deal of work was carried out to renovate and bring the vineyard into full biodiversity, including planting as many trees as possible.

The grapes are fermented as whole bunches for a short time, before being pressed with an old wooden vertical press and raised for eight months of ageing in old wood. Stylistically, the wines are perfumed, aromatic and silky, and balance is always sought.

Tasting notes : Quince, apple, pear and stone fruit. The balance on the palate is amazing, with really good energy. A little spice and grip.

Food pairing : Salad with chicory and puy lentils, grilled fish, or a wedge of Brillat-Savarin.
