Culatello In Corda

One of our most exceptional products at Provisions, we are very excited to share our Culatello In Corda with you!

From the village of Suzzara, Lombardy by the Lusetti family, who have been maturing meats for three generations. 

Made using the best part of the pig, the central leg cut, it is salted and seasoned with black pepper, then rested for 15 days before being bound in rope. It is then matured for 12 to 18 months. 

The climate of the PO valley near Parma makes it extra special: cold winters, windy springs and very hot and humid summers.

Violets and fresh herb on the nose. A bright red core, rich on the palate with aromas of dried fruits and a cellar flavour. 

Ingredients: Pork, natural flavourings, dextrose, E250, E251

Allergens: Sulphur
