Clos 93 Parèntesis 2018 Priorat Spain


57% Garnacha Blanca, 43% Pedro Ximenez

Priorat is better known for its red wines but we were blown away when we tasted this. This part of Catalonia is extremely hot and rugged with rocky, black slate soils known as Licorella that sparkle in the sun. Clos 93 is the region's smallest winery, founded only 10 years ago by brothers Josep and Pepo, who started making the wine in their garage. 

Garnacha Blanca is a staple of this part of Spain while Pedro Ximenez (which also makes a sticky type of sherry in Cádiz) is less common. The wine is fermented in old oak barrels before ageing for six months. 

Tasting notes: Peach, baked apple, honey. It's dry, fresh, and full-bodied with a bold cognac-esque finish. A wine to be reckoned with. 

Pairing: Try with soy-glazed duck or powerful washed-rind cheeses like Epoisse.
