Blackbook Winery - GMF - Oxfordshire/London, UK

100% Seyval Blanc

Blackbook is an urban winery run by wife-and-husband team Lynsey and Sergio. They buy grapes from small growers throughout England and then make them into wine in their small winery under a railway arch in Battersea, south London. Their wine project is motivated by a love of three things: "cool-climate pinot noir and chardonnay; the English wine industry; and this fair city we call home, London."

GMF is named after a song by John Grant. The wine is made from a little-known French grape called Seyval Blanc that grows well in the UK. It is fermented in the bottle, like Champagne and most English sparkling wine, before being aged on its lees. It's bottled with a crown cap and is undisgorged, meaning there is still a bit of lees floating in the bottle.

Tasting notes: Citrus, elderflower, brioche. Crisp acidity with good fizz and some cloudiness.

Food pairing: Pairing with some English fish and chips, covered in malt vinegar.
