You wouldn’t think that one of Italy’s natural wine pioneers spent 12 years as a pizza maker but then again the whole point of natural wine is to defy expectations. La Biancara was born in 1988 by Angiolino Maule and his wife, Rosamaria. His vineyards are located next door to Soave, the region whose wines make the best known expression of Gargenega.

With the help of his two sons, Angiolino’s farms his vineyards biodynamically. The wine is a mainly Garganega with a tiny splash of Trebbiano and is fermented in stainless steel tanks to create a wine that is a pure expression of the grapes.

Tasting notes: Green apple, melon, hay. Tart acidity gives this wine a lovely freshness.

Food pairing: This would match really well with Maiale al Latte (pork braised in milk).
