Alfredo Maestro - La Cosa (The Thing) - Ribera del Duero, Spain

Any wine named after a horror film is going to be a handful, and La Cosa is no exception. Cult winemaker Alfredo Maestro abandoned additive use in the early 2000s and has since introduced biodynamic techniques to neglected vineyards across the Ribera del Duero.

A vinous marmite, this intense dessert wine is not for the faint-hearted: most of the grapes are allowed to fully Botrytise, while others are dried in the sun to concentrate the sugar. Unfined and unfiltered, the end result is a challenging mixture of acidity and sweetness. Forget a cloying Sauternes - this is an all-natural dessert wine unlike any you've tried before!

Tasting notes: Passionfruit, violets, beeswax. Sweet with piercing acidity. Wild.

Pair with: An open mind (and a pavlova).
