100% Macabeo

Oriol grew up helping his uncle in the vineyards before leaving home and getting an office job. But he soon realised how much he missed the vineyards and returned to Tarragona (south of Catalonia). While it is warm down by the coast, the vineyards inland are at a much higher altitude. This cools temperatures, allowing the grapes to stay on the vine longer and make concentrated but delicate whites.

Most of grapes are grown here go to produce Cava and indeed Macabeo is the main component of sparkling wine. But this tiny, organically-farmed plot was planted back in 1949 and produces tiny yields of exceptionally concentrated grapes which are gently pressed, fermented and then aged in chestnut barrels for 7 months. 

Tasting notes: Satsuma, apricots, smoke. Richly textured with fresh acidity. Not a million miles from white Burgundy!

Food pairing: A great accompaniment for chicken and pork dishes as well as soft and mild cheeses like St Marcelin and Brie.
