Gorgonzola Dolce

Gorgonzola is one of the world’s oldest cheeses. It is said to have been produced in the Milano area since the 12th Century. The process was created by combining curds from 2 different days that did not quite fit together, hence leaving air pockets where the blue would spontaneously develop.

At Provisions we have a Gorgonzola Dolce, matured for 100 days. It has a brown/orange rind, the paste has a straw colour with little purple/dark blue pockets of mould. It is really soft and extra creamy. The palate is fruity with a gentle bitterness. It is incredible when heated gently with some crème fraiche and put on top of some gnocchi or stuffed pasta.

Ingredients : Milk (Cow's), Salt, Traditional rennet. Pasteurised.
