Ama Brewery - Lemongrass 1.5% ABV - San Sebastián, Spain


1.5% ABV

A bottle-fermented kombucha made using spring water from the Izarraitz Massif which is fermented with lemongrass sourced for an organic estate in the Sri Lankan Highlands. It is then bottle-aged for six months to integrate the flavours, a process that can continue for up to three years. 

The Ama Brewery was founded by Ramón Perisé and Dani Lasa, two top chefs in the Basque Country who wanted a low-alcohol alternative to wine that retains the same complexity and gastronomic potential. 

Tasting notes: Citrus, ginger, lemongrass. A tiny bit of sweetness balanced by fine acidity and delicate bubbles. 

Food pairings: Fantastic with fragrant dishes and/or spicy dishes like Thai green curry or delicately flavoured goat's and sheep's milk cheese.
