Le Figou was created in 2005 through a collaboration between dairy-shop owner Ghislaine Dupic in Limoges and farmer/cheese makers Fabien and Hélène Mineau, a husband and wife team at l'EARL Fromagerie de La Ribière in Saint-Jouvent. Fabien and Hélène have a herd of just 200 goats on their farm. Le Figou is an artisanal cheese, made on site at the dairy-farm, where it is ladled into moulds by hand, each Figou contains some fig jam inside it. Each Figou weighs between 100g-110g, and is matured for 1-2 weeks.
The cheese has a bright white colour with a thin velvety rind. The paste is soft, creamy and moist, and the cheese has a very fruity taste.
Ingredients: Milk (goat's), traditional rennet, salt, fig. Unpasteurised.
