The I Contadini farm, in Puglia, which is now run by the family’s third generation, was founded on one of the most favourable terrains for cultivating organic vegetables. The combination of sun, soil composition and sea influence are what make Puglia such a famously fertile land, capable of producing excellent vegetables. Il Contadini in Ugento employs integrated farming methods in order to work more sustainably, and every step of production is carried out within the company.
I Contadini’s Yellow Tomato Passata is a rustic and pulpy tomato sauce. Since the sauce is made 100% from tomatoes (no salt or preservatives are added) it has the aroma of freshly picked tomatoes and a full-bodied flavour. The yellow tomatoes make the flavour sweeter with lower acidity.
Their tomatoes are grown organically in an open field in Ugento, Puglia, and harvested by hand throughout the months of July and August. They are scalded on the same day as harvest, ground and then naturally pasteurised. To ensure only quality produce reaches customers, harvesters first make a collection of tomatoes that are not appropriate for use. The remaining tomatoes are collected and stored in cases of no more than 20kg so that they do not get damaged.
