Pelardon

Pélardon is a raw goat’s cheese that comes in the shape of a small disc (60-70mm diameter) weighing around 60 grams. Pélardon gained its AOP status in the year 2000. The Pélardon we get at Provisions comes from a farm in the heart of the Cévennes National Park. They have a heard of just 100 goats who graze at an altitude of 1,100m, being the highest point in its appellation zone.

The rind is thin and delicate, with a white or pale yellow in colour that can develop a natural blue mould as it ages. It has a nutty aroma and a good balance of acidity and saltiness gives it a long-lasting, full, goaty flavour on the palate. The paste is soft, almost mousse-like and should melt just beneath the rind. A fresh marsanne or Chardonnay from the Languedoc would pair the cheese very well.

Ingredients : Milk (goat's), traditional rennet, salt. Unpasteurised.
